This applies to all hooved animals and varies mostly in size and volume. Also, these principals apply whether you get your animal out whole, or have to quarter or debone it in the field.

The elk is broken down into manageable pieces and then turned into steaks or burger according to the customer's orders. The meat could also be kept whole for roasts, bone-in roasts, stew meat, or anything else depending on what you plan to do with the meat as far as cooking.
